Chef Yoshiteru Ikegawa works the grill himself, cooking each skewer over binchotan charcoal with careful attention to temperature, timing, and texture. The omakase features cuts of chicken rarely seen outside Japan: heart, oyster, neck, and cartilage, each seasoned and grilled with careful precision. The cozy counter leaves no room for distractions—only silence, smoke, and the gentle rhythm of skewers being placed onto ceramic plates. With a Michelin star and a devoted following, reservations are hard to get—but for those lucky enough, the experience feels almost sacred.
