Bar Benfiddich is more than a cocktail bar—it’s a personal laboratory of scent, memory, and transformation. Perched on the 9th floor above Shinjuku’s bustle, the space feels more like an apothecary than a lounge. Behind the counter, Hiroyasu Kayama creates every drink from scratch, using house-dried herbs, spices, and tinctures—many foraged or grown himself. There’s no menu; guests are invited to describe a mood or flavor, and the result is often smoky, earthy, or floral, but always balanced and surprising. The lighting is low, the seats are few, and the energy is focused. Globally acclaimed but deeply personal, Benfiddich represents Tokyo mixology at its most introspective.
