Azumaryu is one of Nagoya’s historic sake breweries, situated in the peaceful Moriyama district where tradition and terroir blend. Founded in 1863, the brewery still produces sake using age-old methods, local rice, and pure water from regional sources. Visitors can take guided tours to learn about the brewing process—from rice polishing to fermentation—and taste the brewery’s signature junmai and ginjō varieties. The tasting area and shop feature seasonal bottles and exclusive releases not available elsewhere. Deeply connected to local culture, Azumaryu represents the timeless elegance of Japanese sake and the craft of small-batch brewing.
