Chef Hiroki Yoshitake—who earned a Michelin star in Paris before returning to Fukuoka—commands an open kitchen where fire, foam, and fermentation are equally prominent. The dining room overlooks the bay, and each dish reflects the chef’s international sensibility: precise, balanced, and visually striking. Service is warm and attentive, with wine pairings from both French and Japanese vineyards. Reservations are required, and sunset seating is especially popular.
