Sushi Sho Yotsuya set the stage for a new wave of omakase dining in Tokyo. In this cozy, counter-only space, Chef Keiji Nakazawa pioneered a style that blends Edomae precision with personal rhythm, serving not only nigiri but also small plates, seasonal bites, and his signature chirashi. The atmosphere is focused and nearly minimalist, with every movement deliberate and every cut intentional. There’s no menu—just trust, time, and the chef’s intuition. Reservations are crucial and need to be made well in advance. Though the name has spread through apprentices and spin-offs, this remains the original, quietly producing some of the city’s most celebrated sushi.
