The founder, Chef Taminobu Matsuhata, focuses on making each piece of sushi as a single dish, combining traditional Japanese techniques with international culinary approaches. The restaurant sources fresh, seasonal seafood from Kyushu and all over Japan to ensure top quality. The rice is a specially selected mix of varieties that change with the seasons, and condiments like soy sauce and vinegar are chosen for their excellent quality, with extra touch-ups done in-house. This focus on detail and innovation has resulted in many signature dishes, showing the restaurant's commitment to ongoing culinary growth.
