Located just steps from JR Nagoya’s Shinkansen exit, the ESCA underground outlet of Inou continues a hitsumabushi legacy with wood-lined calm and softly glowing lanterns. The eel is grilled Okinawa-style—no steaming—so skin crisps while flesh stays tender, brushed with a rich, slightly sweet tare. Cooks guide each bowl through the three-step ritual: straight-up bites, herb-and-wasabi notes, and tea-dashi ochazuke. A roomy counter and table layout (~46 seats) feel welcoming for solo commuters or groups, with Japanese-English menus and takeout options rounding out its practical appeal.
